Coral Trout Parmigiana (Fish Parmi)
This take on Parmi is a game changer. Coral Trout hands down destroys chicken in a battle of the Parmi’s. The delicate flavour and texture comes alive in this one.
This recipe was inspired by Elliot from the Cairns Spearfishing Club. On a recent live interview up there, Elliot could not stop banging on about it so when I got home I couldn’t help myself…
…I asked my wife Krystle to recreate it and now our boys and I have a new family favourite with Coral Trout.

INGREDIENTS
- Fish (Coral Trout is perfect but any clean, white, mild fish could replace it)
- Flour
- Egg
- Salt and pepper
- Panco crumbs
- Oil
- Pizza sauce or tomato paste
- Cheese

METHOD
Cut fish to appropriate schnitzel size.
Then, Into three separate bowls place, flour, egg mix and Panco crumbs. (I like to add salt and pepper into both flour and egg mix’s)
Place a piece of fish firstly into flour mix, coat evenly, then place into egg mix, covering well, and finally place into Panco crumb mix bowl. Press down evenly and coat well.
Place on separate plate.
Repeat process until all fish is coated nicely.
Place oil into fry pan for a shallow fry, on medium/ high heat. Place fish into fry pan and cook on each side until nice and golden. Do not place too much fish into pan as you don’t want to crowd the pan.
Repeat process until all fish is golden on outside. DO NOT OVER COOK!
Place fish onto oven pan with non stick paper.
Spread pizza sauce/ or tomato paste on top of fish schnitzels evenly. Add sliced cheese on top and place in oven for 2-3 minutes until melted.
Serve with salad and enjoy!
